Firstly check with hardware vendor what are the pros and cons of extending or creation of new LPARs on existing hardware.

Based on h/w vendors solution you may decide upon SAP instance solution.

Technically if the hardware is capable and supportive to manage 8 LPARS , for SAP installations there are no issues.
